Variety: Assyrtiko
Vinification by cryoextraction and growth of indigenous yeasts. Fermentation for 2 months at very low temperatures in the presence of fine mud. During fermentation, selected pine resin is added for a short time and then removed.
Characteristics: It has a yellowish color enhanced by lemon highlights. Aromas of pine and stone fruit dominate the nose. A little further back, traces of lavender and mastic can be seen. Mouth full with subtle acidity and aromatic aftertaste.
It perfectly accompanies seafood dishes of Greek cuisine as well as international cuisine such as Sushi
