Varietal composition: Assyrtiko
Wining: Selection of Assyrtiko grapes from mountainous areas of Macedonia in Florina and Pieria with particularly low yields. Harvested at the lowest possible temperatures of the day. Strict hand-sorting during delivery. Alcoholic fermentation at controlled temperatures using selected yeast strains. Wine maturation in the tank with stirring of the fine lees after the end of fermentation until bottling.
Tasting Profile: Bright, crystalline, light yellow color. Distinctive and fresh aroma of lemon blossom and flint while embraced by fruity characters such as apple and pear. Refreshing, full-bodied wine with crisp acidity, perfect balance and a lasting aftertaste.
