Winemaking: Classic white winemaking, at low temperatures (16°C). 3-month aging on the lees (sur lies), followed by bottling
Characteristics: Soft, yellow color, aromas of citrus fruits, flowers, Cretan herbs such as thyme and oregano. The high acidity makes it fresh and crisp. The three-month aging on the lees gives the wine greater depth and complexity, resulting in a longer aftertaste with a sense of minerality as its main feature
Wine pairing: Served at a temperature of 12-13°C and can accompany seafood, shellfish, fish and smoked cheeses.
