Its name comes from sour and black. It has unique performance and offers unique red, dynamic rosé, aromatic sparkling but also very white in blanc de noir winemaking.

Variety found in northern and central Greece, Xinomavro stars or has a dynamic presence in the red wines PDO Naoussa, PDO Amynteo, PDO Goumenissa and PDO Rapsani, as well as in the dry quiet and sparkling wines of Amynteo (PDO Amynteo).

The secret of Xinomavro is its acidity and tannins, which - "dressed" with a rich body - launch the taste of wine to the heights! Time is his great friend and xinomavro will reward you when you open a forgotten bottle, for several years in your cellar.

It is a demanding wine, which needs the right terroir, increased cultivation care, low acreage yields and suitable weather conditions, to unfold its grandeur.


In the case of red wines, a long aging manages to tame its character and to give the velvety distinguished wines for which Xinomavro is world famous and inextricably linked with specific origins, such as Xinomavro-Naoussa, Xinomavro-Amounai etc.


Other times, the producers choose to mix it with milder varieties, such as some foreign or the Greek cruciform and wine (PDO Rapsani) and negoska (PDO Goumenissa), in order to make its wines more accessible to their youth.

Harmonious combinations

From meat, Xinomavro goes perfectly with spicy cold cuts and sausages, braised meats, stew, pork with spicy sauces, fragrant game and stuffed goose.

However, it can be combined with various cheeses, such as goat, arm and mature gruyere on cold winter nights.

But he also loves pasta, making the perfect accompaniment to a Neapolitan spaghetti dish or a risotto with wild mushrooms.
