Varietal composition: 100% XINOMAVRO

Winemaking: The flagship of the winery's red wines is produced from the Xinomavro variety. These are grapes that come from a single vineyard in the area of Fitia, at the foot of Vermion. The vine is cultivated with mild cultivation practices and gives low yields per acre. During winemaking, an effort is made to tame the intense tannins of Xinomavro, protecting and highlighting its unique aromatic richness at the same time. The wine matures in 500lt oak barrels for 12 months and ages for another 8-12 months in the bottle, in ideal temperature and humidity conditions in our cellar.

Aging potential: 15 years

Flavors: Red and black fruits (cherry, plum, black berries), clove

Pairing: Red meat, game, mature cheeses, cold cuts
