Varietal Composition: Sauvignon Blanc 100%
From selected vineyards in Agios Panteleimonas Amyntaio, in the Samaropetra area. Almost continental climate with cold winters and mild summers with the contribution of the north wind that blows steadily in the area, as well as the neighboring lakes that act as a balancer in the weather conditions throughout the year. Thus, during the ripening period, mild midday temperatures are maintained in the summer, and a significant temperature difference between day and night. In this mesoclimate, combined with the sandy soils and the altitude (600-700 meters), Sauvignon Blanc finds the ideal conditions. The grapes have high aromatic potential and high acidity.
Vinification: Strict selection on a vibrating table. Pre-fermentation extraction. Fermentation in stainless steel tanks at temperatures of 16-18°C, and maturation in contact with the fine lees for about 4 months, with periodic, gentle stirring (batonnage).
Characteristics: Lemon green color. Typical nose of the variety, with freshness and green aromas -green pepper, asparagus, cut grass-, and notes of white flowers, peach and citrus in the background. Full but crisp mouthfeel thanks to the good acidity that provides balance. Long aftertaste.
Food Pairings: Enjoy as an aperitif and pair well with fresh fish, seafood dishes, Asian cuisine, white meats, asparagus or classic Mediterranean dishes, such as ladera.
