Winemaking : Winemaking is done by fermentation and long extraction (15-20 days) in stainless steel tanks of controlled temperature. Maturation in American and French oak barrels with a capacity of 300 L. for 6 months, including malolactic fermentation.

The oldest Greek variety, Limnio, with the application of innovative winemaking methods, has matured for 6 months in oak barrels. This micro-oxygenation process creates a wine with soft aromas of red fruit, with oak aromas in the background. The color is purple, with aromas such as black cherry, pomegranate, peppery notes, curry as well as dark chocolate. Stacked in the mouth, good acidity with built-in tannins. Full but at the same time elegant, it has a long peppery finish.
