Organic Wine

Variety composition : Malagouzia

Appearance : Deep white-yellow color with greenish highlights

Aroma : Its main feature is the expressive nose of great aromatic intensity. It is generously aromatic and focuses on a perfectly fruity character of melon, apricot and citrus while it is framed by more mature and sweet aromas such as honey and jasmine.

Taste : Fine and complex in taste with a full body. Characteristic peppery taste that ties in perfectly with the honey character that brings out the aftertaste. It is extremely balanced between acidity and alcohol while it also produces a full slightly oily body that harmoniously bridges the passage from the nose to the mouth.

Harmony of flavors : Seafood and fish dishes, such as lobster spaghetti and grilled ribs, pies (vegetable pie and prasopita), poultry dishes, such as chicken lemonade with potatoes and lamb fricassee with artichokes, pasta and pasta with creams. Yellow cheeses like parmesan.

Serving Temperature : 10-12. C

Strict handwriting during receipt. Typical white winemaking with pre-fermentation cold extraction. Alcoholic fermentation at controlled temperatures using selected yeast strains. Maturation of the wine in the tank by stirring the fine mud after the end of fermentation until bottling. The climatic conditions combined with the correct management of the vineyard, led to an excellent year for the grapes of Malagouzia of the Matsa Estate for 2017. Seeing the quality potential of the year, we extended the time of pre-fermentation extraction so that we can make the most of it. grape potential. Of great importance in this year's Malagouzia was the maturation with regular stirring of fine mud for a period of 6 months which gave further finesse and structure to the wine. It was bottled after mild filtration.
