Protected Designation of Origin Paros

VARIETAL COMPOSITION: 100% Monemvassia

VINEYARD: Ungrafted vines formed in traditional “aplotaria” over 90y.o. from the mountainous area of Thapsana (400m altitude).

WINE MAKING: Maceration and fermentation in stainless steel tank at low temperature with wild yeast. Ageing on its fine lees for 12 months. The wine was bottled unfiltered.

TASTING NOTES: Intense citrus aromas, candied apricots, and peaches with notes of honey and white pepper. Rich body with crisp acidity and exceptionally long aftertaste.

PAIRING SUGGESTIONS: Big fatty fish on the grill, oysters, steamed mussels, white meat.

Best served at 8-10℃
