It comes from organic grapes of the xinomavro variety, about 35-40 years old. The grapes were harvested in early September, followed by cold extraction at 12 degrees Celsius for 5 days together with the marcs. The marcs were then removed and the fermentation was completed. The wine was left with its fine sludge in a tank for 10 days and then passed a coarse filter to remove the sludge. It was placed in another tank where it started the process of secondary fermentation to create carbon dioxide for the production of foam. At a final pressure of 5.2 bar, the acidity and must must be adjusted and then bottled at 2 degrees Celsius. The production amounts to 6,000 bottles. The alcoholic strength by volume is 12.5% vol.
Try it at 10oC to uniquely open or close a meal.
