Traditional Champagne Method
Varietal Composition: Assyrtiko, Limniona
Wine and Vinification: A blend of Assyrtiko and Limniona (50/50), produced using the traditional method, so the effervescence comes from the secondary fermentation that took place in the bottle, while we have a stay with the lees that exceeds 18 months.
Tasting Characteristics: The wine is classified as Extra Brut. The prologue has a bright light pink color. The nose is dominated by red fruits, along with floral notes and in the background we can distinguish the classic yeast aromas of the traditional method. The mouth is characterized by finesse with the red fruits playing with the brioche notes and the refreshing high acidity giving freshness, leading to a long and fruity aftertaste.
Enjoy it as an aperitif but also throughout the meal. Ideal combination with food, Shrimp salad, seafood pasta e.g. lobster pasta, strapatsada.
Ageing: Due to the classic winemaking method and the secondary fermentation in the bottle, it can be aged for several years in good storage conditions.
