Varietal Composition : 100% Chardonnay
Growing and Winemaking : Chardonnay vines are planted in slate soils, which gives the grapes freshness and finesse. Today, Chardonnay is cultivated in an area of 8 acres using organic methods and aiming at low yields not exceeding 600 kg / acre. The grapes are picked by hand and carefully selected before being taken to the winery, where a second sorting is done. The grapes are then lightly pressed and go through a pre-fermentation stage at a temperature of 10-12 oC. After a period of 4 months with light stirring of the wine sludge, the result is a wine with cool acidity and round body.
Characteristics : Chardonnay is a wine with a bright yellow color and green highlights. The nose is dominated by aromas of citrus and tropical fruits in combination with plant and mineral notes. In the mouth, the juicy fruity aromas balance with the refreshing acidity and the buttery texture, while the finish leaves in the mouth aromas of lasting fruit.
Accompanies : Ideal food wine, Chardoannay can be combined with a wide variety of Mediterranean cuisine, from classic oily to grilled chicken or fish, while we can enjoy it on its own as an aperitif.
It is served : at a temperature of 9-10 οC and it is better to consume it fresh, although it can be kept in the bottle for another 1-2 years.
