Varietal composition: 100% Kotsifali
Kotsifali Karnari is a wine that embraces the Cretan tradition of producing “Marouvas” style wines, adapting them to a milder style. The free run juice from well-ripened Kotsifali where the grapes were fermented as white wine at 17-19° C. Almost at the end of the alcoholic fermentation, the wine matured in reused French barrels, where it remained for almost 3 years.
The Kotsifali grape, grown in the Karnari region, gave us a wine that brings out the warmth of alcohol in sweet fruit and spicy notes, elements that reveal the long aging in used barrels. The gentle influence of oxygen, both on the aroma and taste of the wine, is well integrated, providing complexity and stability to the wine.
Food pairing All appetizers, especially spicy cheese or olive oils. A wide variety of grilled, smoked or cured meats.
Serve at 15oC-17oC.
