Varietal Composition: 40% MERLOT, 40% AGIORGITIC, 20% MANDILARIA
Production process: Harvesting of the grapes at the moment of optimal ripeness by hand in small crates and direct transport to the winery. Cooling of the grapes at 8°C, destemming and pre-fermentation extraction for 3 to 4 days (depending on variety) at 10°C. Alcoholic fermentation follows at a controlled temperature (18-23°C), in the presence of the lees for 12 to 15 days (depending on the variety) in stainless tanks. Partial malolactic fermentation and maturation for eight months in French oak barrels.
Tasting characteristics: Ruby color with purple highlights. Intense aroma of red and black fruits such as berry, cherries, spices, chocolate and vanilla. Rich and flavorful with soft tannins and lively acidity and lingering aromas of fruit and spice on the finish.
AGING IN THE CELLAR: 1-5 years
Harmony of flavors: Combines with red meats and game cooked in the pot or grilled, Peking duck, Creole and TEX-MEX cuisine, legumes, rich cheeses.
SERVING TEMPERATURE: 15-17°C, in a large Bordeaux-type glass.
