Production process: Collection of the grapes by hand in small crates and direct transport to the winery. Cooling of the grapes at 8°C, destemming and pre-fermentation extraction for 9 hours at 10°C. Static desalination and fermentation at a controlled temperature (18 °C) by 80% in small stainless tanks and 20% in barrels. The de-fermented wine remains with its lees for three months with frequent agitation.
Aging in the Cellar: 1-3 years
Tasting characteristics: Bright lemon color with green highlights. Intense aromas of spring flowers, peach, mango combined with botanical hints. Rich in the mouth with the aromas continuing with the same intensity and balanced by its cool acidity. The aftertaste is fruity and herbal.
Serving temperature: 8-max 12°C
Harmony of flavors: Grilled poultry, grilled molluscs, squid stuffed with feta cheese and pepper, risotto with asparagus trilogy, vegetable spaghetti, crispy fried vegetables, cheese tarts, cool salads with aromatic herbs, marinated appetizers and Asian appetizers.
