APPEARANCE / Light gray color
NOISE / The almost ten-year aging of the wine gives it a wonderful wealth of aromas and memories. Dried plums, tobacco, soy, cigar box, salty notes of pasturma create a nose that changes, evolves and surprises.
MOUTH / The aging has given the wine a velvety texture, while the emphasized acidity still keeps it lively and full of nerve. The moderate alcohol, the beautifully ripe tannins and the moderate volume of Nebbio, give the wine balance and flexibility.
Vinification: Pre-fermentation cryo-extraction of a few days to transfer noble phenols and structure from the grape to the must, before the "appearance" of alcohol. Fermentation takes place in stainless steel tanks with regular recycling for the extraction of color and tannins. After malolactic transformation, the wine is transferred to old, neutral oak French barrels of 225 liters where it remains for 4.5 years. Light filtration and bottling.
Served with: Velvety textures, complexity and depth of flavor are the elements that we will look for in our dishes to accompany the unique and rare Nebbio. It will pair beautifully with dishes such as a juicy beef Wellington wrapped in crispy pastry, a wild boar fillet, a mushroom risotto with grated parmesan, but also a burger stuffed with blue cheese cream.
It is suitable for long aging.
