Varietal composition: Assyrtiko


Characteristics: Idysma Drios Assyrtiko is vinified in French oak barrels and impresses. Exuberant, with concentration and volume but at the same time with the characteristic lemony vivacity of Assyrtiko, it is a wine that offers everything in the right doses. The raw material comes from vineyards in Mikrochori and Kali Vrisi, areas with cold winters and refreshing northerly winds in the summer.


Vinification: Pre-fermentation cold extraction so that the aromas of the grapes are transferred from the skins to the must. Fermentation begins in stainless steel tanks and on the seventh day the must and wine lees are divided proportionally into 225 liter French oak barrels. Fermentation is completed in barrels and then the manual bâtonnage method (stirring of the noble lees in barrels) is applied for approximately 6 months, a method that gives the wine volume, density and a creamy feel.


Served at: 12°C. Idysma Dryos Assyrtiko is a creamy wine, with strength, volume and concentration and at the same time a lemony freshness that makes the wine lively and sparkling. It combines exuberance with straightforwardness and is an ideal accompaniment to correspondingly exuberant dishes such as mushroom risotto, chicken ballotine with sweet potato puree, lemony pork, oven-baked lamb and truffle dishes. Of course, large, ‘meaty’ fish such as tuna and smoked salmon, as well as octopus with smoked fava beans, will stand out from the wine and converse with its aromas.


It is suitable for aging.
