Varietal composition: Potamisi - Assyrtiko
Vinification: Combining the Cycladic varieties Potamisi and Assyrtiko with wild yeasts in oak barrels and aging for 6 months on fine lees. Unfiltered, minimal intervention and stabilization.
Characteristics: Not completely clear, light amber.
A colorful canvas of exuberant dimension on the nose, with white chocolate, brown honeys, jam and dried apricots, orange liqueur but also orange honey, with burnt kumquat peels, while essential oils from cracked spicy seeds suggest herbalism, under a safe oxidizing umbrella. Rich spicy environment, with mocha and cocoa, some bulbous and leather notes appear, hint of dried calendula flowers. Fired, arching Cycladic amalgam in the mouth, with an amazing six-month barrel as an intermediate characteristic. Oily, juicy with a sticky texture, the bigeneric elixir sharpens majesty and sweetness with glyphs, in the full, unified volume, having mineral origins to cooperate with the secret reserves of tension and energy, resulting also from the robust acid tone. Subtly oxidizing, with virtuoso flavors from the honeyed, jammy and liquefied fruits, it is extremely spicy and with its botanical moments on point. Long, phenolic, lingeringly enticing and spicy aftertaste, with heat from the alcohol quenched by mineral estrus. Again savory and sweet with its honeyed sweetness, it renews the spicy and herbal mood with a sub-bitter tempo that pleases." Pavlos Gekas MW
