Vinification: Co-combination with pre-fermentation cryoextraction for a few hours, fermentation at a controlled temperature and maturation in a tank on its fine lees with periodic stirring.
Characteristics: The minerality of Assyrtikos, the citrus fruits and its dynamic character is revealed in the mouth generously with crisp acidity, complex and exuberant aftertaste. Color in the light palette of salmon and aromas of small red fruits such as strawberries, blackberries, stone cherry, and sour cherry from Mavroudi Thrace. A purely culinary wine that struggles when consumed alone in the absence of food.
Goes well with shellfish, oily fish, seafood, white and red meat, Mediterranean cuisine, pasta and salads. Enjoy it after decanting into a carafe, today and for the next 5 years.
