Wine Type: Dry Red
Indication: PGI Parnassos
Varietal composition: Cabernet Sauvignon - Mavroudi
Wining: After harvesting the grapes in 15 kg crates, the healthy grapes are carefully sorted. From there, they are taken to the crushing plant (no press) and then vinified separately due to the different degree of ripeness of each variety. Cabernet ferments at high temperatures of 26-28ºC in order to achieve the best color intensity, while Mavroudi at 18-22°C in order to maintain the maximum aromatic potential of the variety. Aging follows in French oak barrels.
Tasting characteristics: Deep red color with complex aromas of red fruits and notes of chocolate, coffee and oak compose a dynamic wine. Ripe tannins and impressive density create conditions for long aging.
Gastronomic combination: It combines harmoniously with juicy red meats, game and smoked cheeses. . Ideally served at 10°C.
