Characteristics: The premium-quality, fresh green olive oil “Edia” comes from yellow-green Koroneiki olives in the Deliana area of Kolymvari and is harvested early, between October 4th and 15th. Cold extraction takes place eight hours after harvest, making it rich in polyphenols (870mg/kg at extraction), which are found just beneath the skin of the olive, with an acidity level of 0.25.
It has a robust flavor, intense aroma, and a spicy aftertaste. It is bottled in limited quantities using the sedimentation method to preserve all its valuable components.
The product is certified with a “Health Claim” under Regulation No. 432/2012 by the European Union
