Description: A wine with a deep red color that reflects its complexity and imposing character. On the nose, an ethereal, elegant bouquet of fruits such as plums and berries, flowers such as violet and licorice and a discreet presence of pepper. Notes of vanilla and wood complete the bouquet. In the mouth the structure supported by strong tannins and balanced acidity. A very complex wine with a special aftertaste.
Winemaking: The selected grapes are placed in wooden tanks (5 tons) for stirring and homogenization. There is no use of dough or auxiliaries. The fermentation lasts 10 days, during which the "piégeage" is applied with the aim of extracting the phenolic components. The two varieties are vinified separately. The temperature is constant at 24 ° C. Separation of the must, malolactic fermentation in oak barrels or wooden tanks. Aging: 18-24 months in barrels of 300 liters of French oak (first and second use) of selected and leading manufacturers. During the ripening period, the wine will be homogenized twice. Extra aging in the bottle for at least 12-24 months before placing on the market
Serving Suggestions: Served at 18-20 ° C, accompanied by meats with rich red sauces, game and aged ripe cheeses.
