Varietal Composition: Cabernet Sauvignon | 100%.
Ageing: 10+ years.
Vineyard location: Mountain vineyards of Trifyllia | 800m. Altitude.
Characteristics: With a deep ruby color and brown highlights, the aroma reveals notes of forest fruits, blackberry, plum, along with spices, wood, vanilla and subtle elements of tobacco. In the mouth it is full, with intense but soft velvety tannins, rich body and a long aftertaste with a warm, sweet finish.
Winemaking: A strict selection of organic grapes is carried out from privately owned vineyards of Trifyllia. Fermentation takes place in stainless steel tanks, after a 48-hour cold extraction, at a constant and relatively low temperature for 10-12 days. During the process, gentle extraction and maceration of the cap are carried out, followed by malolactic fermentation. The wine matures for 12 months in French oak barrels, remaining with the fine lees for a rich structure, and spends an additional 12 months of aging in the bottle.
Temperature: 15-18°C.
Ideal for enjoying alone or accompanying meats, such as barbecue, game, beef and lamb, as well as spicy cold cuts and aged cheeses.
