Varietal composition: Cabernet Franc
Winemaking: Asprokampos Nemea: Vineyard at an altitude of 800 m, on the plateau of Stymfalia, in deep, clayey, alkaline soils, with enough calcium carbonate, the yield of which does not exceed 900 kg / acre. The climate of the area is characterized by cold winter, with plenty of rain and snow, cool spring and dry summer, with high temperatures during the day and cool nights. Shaping of the stem wall according to the LYRA system of Prof. A. Carbonneau, in order to maximize the leaf area exposed to the sun per kilo of grapes produced. Harvest in mid-September. Brief pre-fermentation cold extraction in grape pulp, followed by alcoholic fermentation with selected yeasts and extraction at temperatures up to 25oC. Maturation of the wine for 9 months, in 225 liter barrels, from French oak. Bottled unfiltered.
Tasting characteristics: Deep red-crimson color, aromas of ripe red fruits, vanilla, with distinctive tones of green pepper, and aromatic herbs. In the mouth round, balanced, aromatic, with mild tannins and pleasant acidity. Aftertaste with intensity and duration.
It accompanies grilled meats, dishes with red sauces and aromatic herbs, as well as medium-intensity cheeses and cold cuts.
It can be aged for many years
