Characteristics: The high quality organic olive oil "Edia" comes from yellow-green olives of the Koroneiki variety in the Deliana area of Kolymvari and is harvested early, between October 15 and 30. The cold pressing takes place eight hours after the harvest, making it rich in polyphenols, with an acidity of <0.2.

It has an intense flavor, intense aroma and a spicy aftertaste. It is bottled in limited quantities using the sedimentation method to preserve all its valuable ingredients.
