Varietal Composition: Syrah, Merlot, Xinomavro. The winemaker's choice. The top 17 barrels of each vintage in which the winemaker chooses to present the absolute expression and dynamics of the Amyntaion Viticultural Zone.
Vinification / Aging: Destemming, pre-fermentative cryo-extraction and then classic red vinification at absolutely controlled temperatures. Aging: 36 months in specially selected French oak barrels. 200% new barrel (18 months + 18 months). No treatment or filtration before bottling and additional aging for 18 months in the bottle.
Taste characteristics: Rich, with intense characteristics of ripe red forest fruits. Complex bouquet with typical and complex aromas. Particularly rich and highly structured ripe tannins. High level of taste balance that ends with a particularly long aftertaste. Aeration intensifies its organoleptic characteristics and for this reason it is recommended to decant it at least one hour before serving.
Harmony: It is combined with rich meats, grilled or with rich sauces, cooked with vegetables, bulbs and wine. Marinated game, in combination with chestnuts and plums. Fatty or aged cheeses, with an intense and rich flavor.
Ideal enjoyment at 16-18° C.
