Variety: Xinomavro Single Vineyard

Production: 1300 bottles

Wining: Fermentation takes place at low, controlled temperatures (12–16°C), preserving freshness and aromatic clarity. The wine is then aged for a total of 10 months in French and American oak barrels, with 3 months of contact with the lees and gentle agitation, giving it depth, texture and a distinctive oak character.

Characteristics: On the nose: white flowers, citrus fruits, white peach and subtle notes of vanilla wood and nuts. On the palate: balanced, with crisp acidity, refined texture and a long aftertaste. The presence of oak is subtle, adding complexity without overshadowing the fresh character of Xinomavro.

Pairs well with: Grilled fish, seafood in white sauces or fresh pasta with mushrooms, or try it with a pizza (without tomato) with goat cheese and herbs.
