Category: PGI FLORINA
Varietal composition: Assyrtiko
Origin: The grapes originate from the family's privately owned vineyards, planted in poor, sandy-loam soils. The cold winters, cool summer nights, and northern winds allow the grapes to ripen slowly and steadily, keeping their acidity perfectly intact. The harvest is executed entirely by hand.
Tasting Notes: Features a nervy, high acidity (the hallmark of the variety) that brings incredible vibrancy and drive. The body is medium-to-full, offering clean fruit flavors, a crisp texture, and a long, refreshing, slightly saline finish.
Food Pairings: Ideal for raw seafood, ceviche, oysters, as well as grilled calamari or octopus. Pairs beautifully with fresh fish grilled over charcoal (e.g., sea bream, sea bass, red porgy) as well as oilier fish varieties. Accompanies lemon-infused dishes excellently, such as lemon chicken or pork, as well as fried appetizers (fried cod with garlic dip, zucchini) because its acidity effortlessly cuts through the oiliness.
Alc: 14%
