Varietal composition: 100% Assyrian
Vineyard: Linear organic vineyard in Phyliria (wine region of Goumenissa). Soil: Medium sand-clay
Vinification: The grapes are carefully selected, gently pressed and then the juice stays with the grapes for 2 days. After this extraction process, the juice is transferred to old French barrels (6 years old) where it is left to ferment spontaneously. There is no addition, clarification or filtering and the sulfur level is very low and is added before bottling. After fermentation, the wine is aged in the same barrels for an additional 3 months.
Aging: 3 months in old French oak barrels and 6 months in the bottle
Organoleptic characteristics: This white wine has golden highlights and little turbidity. The aromatic bouquet consists of aromas of lemon, musk lemon, white fruit, green apple and honey. It has a full and round mouth, with good acidity and a long aftertaste.
