Winemaking : The sorting begins with the vine and ends with the sorting film before the grapes are transported to the tanks. The "blanc de noir" method is followed, ie the acquisition of only 40% of the white must of red grapes by careful exploding and juicing without pressure, so that it does not contain the pigments and other phenolic substances of the rind. Very slow alcoholic fermentation takes a few weeks at a controlled low temperature of 16 - 17oC, so that the wine produced strongly retains the aromas of the grapes and the liveliness of the fermentation.
Delicious structure : Bright yellow-yellow color with a suspicion of reddish highlights - indicative of the way of vinification - aromas of white flowers and citrus and a pleasant, lively taste in a distinct but harmoniously balanced acidity.
Accompanies : Fish with herbs, white meats with lemon sauces, semi-hard cheeses.
