DRY RED VARIETATAL WINE
VARIATE: MOUCHTARO
AREA: PGI Viotia wine-growing zone.
VINIFICATION: Harvesting of grapes by hand and their rapid transport to the winery. Cooling of the grapes, destemming and pre-fermentation extraction. Bleeding, static settling and fermentation at a controlled temperature (14°C) in stainless steel tanks.
AGEING: After the end of the alcoholic fermentation of the wine, it is aged for 4 months on its lees with periodic stirring (bâtonnage).
TASTING CHARACTERISTICS: Ruby color and complex bouquet. Aromas of spices, pepper, cinnamon, tobacco, framed by abundant black fruit (plum, raspberry). In the mouth it is rich, spicy, exuberant with ripe, noticeable tannins and a round aftertaste.
PAIRING: Meat with rich red sauce, a variety of country sausages, olives, pizza with cold cuts, etc. IDEAL ENJOYMENT: At 15-16°C
