Description : Deep ruby color with burgundy highlights. The nose is dominated by aromas of ripe black fruit and delicate vanilla, with plant and earthy notes in the background. The mouth is dry and rich with strong tannins, while the balanced acidity gives freshness to the fruit and sweet spices. Long and generous in taste finish.

Vintage Winemaking : By hand from the first ten days of October. The grapes are transported to the winery. Selection. Co-vinification of the 3 varieties. Long-term extraction and oxygenation in order to fully utilize the phenols and aromatic potential of the grapes. Traditional fermentation for 10-12 days in open concrete tanks Apple cider fermentation.
Maturation : 18 months in barrels of 300 liters of French oak (40% new / 60% 2nd and 3rd use) Aging: At least 18 months in the bottle before placing on the market
