VARIETY: Syrah
Origin of Grapes: Selected privately owned vineyard with the Syrah variety, cultivated in Petri location in the village of Yaltra, Edipsos Evia.
Vinification: Spontaneous fermentation with native yeasts in open tanks, for the ultimate expression of the terroir. Aging in French oak barrels of 225 liters for 12 months and aging 24 months in the bottle. It is bottled unfiltered.
Aging Potential: Enjoy it now or age it in proper conservation conditions for at least 12-15 years from its release.
Characteristics : The "wild yeasts" give a deep red color, almost impenetrable. On the nose, the complex aromas of black fruit, violet, chocolate and spices blend harmoniously with the aromas of oak. Compact and rich mouthfeel, rosy with velvety tannins. Long and sweet aftertaste.
It accompanies grilled meats or cooked with rich sauces, peppered fillets and a variety of charcuterie. Goes great with baked lamb, roast wild boar and hard yellow cheeses.
