Process : The grapes are crushed and remain with the skins for at least 4 days and then 50% of the
freerun juice is seperated in Small inox tanks and Clay vessels for the fermantation using only Dry ice for cooling and to avoid oxidation.
After 9 months on its Lees the wine is blended and bottled by hand Unfined – Unfiltered and remains in the bottle for aging for another 9months.
Production : 1500-2500bottles/year depending on the vintage.
