Production: VISSA is produced exclusively from fully ripened organically grown Xinomavro grapes from 20-year-old vines in the single privately owned vineyard in the ‘Palaeokastra’ area ‘Vissa’ according to Homer - in Megaplatanos, Atalanti.
The low-yielding Xinomavro vines grow in the infertile-limestone clay soil with a content of almost 30% active calcium Ca+2. The growing year can be described as a year with a harsh and rainy Winter, with a cold but healthy Spring and a cool Summer without extreme temperatures. This led to an extended maturation period and highly concentrated fruit, which was vinified in temperature-controlled stainless steel tanks.
Vinification: Complete malolactic conversion and maturation took place for 18-24 months in 70% new French oak barrels, 50% 228l and 50%, 400l, 20% 1-year and 10% 2-year. VISSA wine is naturally stabilized.
