Tasting characteristics:
APPEARANCE / Purple with greenish highlights
NOISE / Uniquely typical Xinomavro nose with balsamic aromas, potpourri, red berries, forest fruits, helmets, sun-dried tomato, wet forest, leather and truffle notes.
MOUTH / In the mouth, the earthy flavor character prevails, along with high acidity, full body, high tannins, ripe but intense, full of alcohol and body.
Vinification: Pre-fermentation cold extraction of a few days in order to transfer noble phenols and structure from the grape to the must, before the "appearance" of alcohol. Fermentation takes place in stainless steel tanks with regular recycling for the extraction of color and tannins. After malolactic transformation, the wine is transferred to 225 liter French oak barrels, 50% new, for the final stage of 12 months of maturation. Light filtration and bottling.
Served with: The aged profile of the wine will create beautiful flavor bridges with dishes cooked in broths with depth and complexity. Plates of grilled mushrooms, fine prosciutto, Ragù sausages with tagliatelle and truffle risotto will take off the taste experience that Xi generously offers. Fatty veal steaks, pork pate, gorgonzola and aged yellow cheeses complete the picture of delight.
It is susceptible to long aging.
