Varietal composition: 80% Chardonnay - 20% Sabbatiano
Vine: Made up of 80% Chardonnay and 20% Savatiano, this blend is preserved with fresh pine resin harvested from pine forests in Halkidiki using ancient Greek techniques. The vineyard where our Chardonnay is grown is located in the PGI wine region of Epanomi, on slightly elevated, sloping hills about 1 km from the coastline of the Aegean Sea. It includes 1.25 hectares of plantation located on a south-east facing slope. The peninsula provides excellent conditions for dry, full-bodied white wines. The constantly changing temperatures combined with the nearby mountain ranges, create winds from various directions, as well as favorable temperature fluctuations.
Vintage: The grapes were treated with minimal irrigation and the harvest was done entirely by hand. The grapes were relatively small, but healthy and fine-textured. Warm weather determined a very early harvest in the second week of August.
Vinification: Carefully calculated doses of pine resin have been added gradually during fermentation to ensure optimal absorption of the resin, resulting in an excellent full-bodied cuvée with a hint of pine resin.
