From 1550 there are official reports of the existence of the monastery vineyard. The metochi and winery as a building with the addition of a dormitory and chapel were used by the monks for the cultivation and harvesting of grapes. The must was then transported in mules to the Great Cave, where in its famous underground cellar it was converted into barrels of 500lt. Around the end of the 1980s, the cultivation of the estate stopped due to the gradual departure of the monks from the Great Cave and the lack of care. The abandoned vineyard was renovated in 1999 with a long-term lease of the Cavino by the Monastery of the Great Cave.
The Mega Cave III cuvee has a deep purple color while its youthful nose delivers strong aromas of red and black fruits accompanied by floral and spicy notes. The palate is juicy with a soft but firm structure. The juicy sweetness of the fruit is characterized by flavors of cherry, gooseberry & cassis while spicy notes are not missing. Soft tannins, acidity and a satisfying long fruity aftertaste, complete the balanced palette of this round, full and delicious blend that is made to offer enjoyment now and within the next three years.
