Vineyard: • Location: Historic vineyard Megalou Spilaio Estate. • Area: 3 hectares. • Altitude: 820-880 m. • Cultivation: Organic. • Soil: Clay & sand. • Production: 4tn /ha. • Formation: double-sided cordon. • Planting density: 4100 plants /ha. • Harvest: Mid-October.
Winemaking: After receipt, the grapes are cracked, rennet is extracted and they remain with their skins until the end of fermentation. Then the wine is transferred to the cellar for maturation in new French oak barrels. It remains there for at least 2.5 years, while it remains in the bottle for another year to achieve the appropriate balance. The wine does not undergo stabilization and filtration treatments for the benefit of its taste quality.
Tasting Characteristics: Intense red color. Aromatic characters of white pepper, black fruits and botanical notes dominate on a background of chocolate and coffee. Tasting is balanced, refined and complex with satisfactory acidity and elegant tannins. In the finish, the aftertaste is long and pleasant with notes of spices and chocolate.
Aging: Suitable for many years of aging.
Harmony: It harmoniously accompanies red meats with rich sauces, game, mature yellow cheeses.
