Wining: After receipt, the grapes are crushed and remain in the tank until the end of fermentation. The wine is then transferred to the cellar for malolactic fermentation and maturation in new French oak barrels. It remains there for at least 2 years. It is then bottled and left in the bottle for at least another 2 years. The wine does not undergo stabilization or filtration to benefit its taste quality.
Tasting Characteristics: Intense red color with red highlights. Aromatic characters of green pepper, red fruits and mint with hints of tobacco and roasted nuts dominate. Tasting is complex, structured and full of intense tannins and balanced acidity. A fruity aftertaste follows in the finish.
Aging: Suitable for many years of aging.
Pairing: Accompany grilled meat, slow-cooked game, and mature, spicy cheeses.
