Orange Wine
Region: PGI Achaia
Variety: 50% Roditis – 50% Assyrtiko
Vineyard: Mountainous vineyards (800-900m) around the Megalos Spilaios vineyard. Harvest takes place in the last ten days of September
Winemaking: The grapes are destemmed and carefully transferred to new, open, 400lt oak barrels for alcoholic fermentation, in the presence of the marc. After the alcoholic fermentation is over, the wine is removed from the grape solids, the barrels are closed and the wine is returned to them for aging. It remains there for 16 months, where malolactic fermentation is completed and the wine matures and evolves naturally. Then, it is carefully decanted and bottled without intervention. It remains in the bottle for at least three years to “soften” and develop its complexity.
Tasting Characteristics: Light orange color. On the nose, white dried flowers & herbs, spices, with mineral and roasted hints are discernible. On the palate, elegant and complex with rounded tannins and acidity that create complexity.
Aging: Suitable for aging.
Harmony: Accompany grilled mushrooms, fatty fish, meats with creamy or white sauces and rich mature cheeses. It is recommended to carefully decant into a carafe just before serving, for a fuller enjoyment and to avoid sediment.
