Vineyard: • Location: Historic vineyard Megalou Spilaio Estate. • Area: 1 hectare. • Altitude: 780 m – 820 m. • Cultivation: Organic. • Soil: Clay & sand. • Production: 3tn /ha. • Formation: double-sided cordon. • Planting density: 4100 plants /ha. • Harvest: Early October
Wining. After receiving the grapes, they are crushed and remain in the tank until the end of fermentation. The wine is then transferred to the cellar for maturation in new French oak barrels. There it remains for at least 2 years. It is then bottled and left in the bottle for at least another 2 years. The wine does not undergo stabilization or filtration to benefit its taste quality.
Tasting Characteristics: Deep ruby color with vivid blue highlights. Aromatic characters of black pepper, black berries and dried flowers with hints of leather and tobacco dominate. Taste is exuberant, round with elegant tannins. The finish is dominated by a long and pleasant aftertaste.
Aging: Can be aged for many years.
Harmony: Accompany dishes based on red meat, BBQ and mature, spicy cheeses.
*It is recommended to carefully decant into a carafe just before serving, for fuller enjoyment and to avoid sediment.
