Varietal Composition: Cabernet Sauvignon, Limnio
Origin: It comes from a selected vineyard in "Metochi Chromitsa", in the unique ecosystem of Mount Athos.
Location: The vineyard surrounds the monastery of Agios Panteleimon at an altitude of 250m above sea level. Soil: Sandy loam
Subsoil: Deep limestone subsoil with sufficient moisture. Climate: Ideal climate conditions with increased sunshine, little rainfall and sea breeze.
Winemaking: Traditional red winemaking in open oak tanks (50 hl). Intensive, prolonged recycling during fermentation taking advantage of the large wetting area for intense extraction. This is followed by malolactic fermentation in French oak barrels 225lt for the slow and gradual integration of the barrel extract substances in the wine. Aging: Remains in the French oak barrels for 8 months and is followed by reductive aging in a bottle for 4 months where it continues to evolve its character.
Character: Deep purple color with ruby highlights. Elegant aromatic character of forest fruits, cassis, spices and licorice, combined with sweet vanilla and truffle characters, the result of many months of aging in oak barrels. Rich and attractive palette, with a robust body and a special aftertaste, characteristics that testify to the rich potential and the excellent adaptation of the varieties to the microclimate of the area.
Serving Suggestions: Served at 18-20 ° C, accompanied by meats with rich red sauces, game and aged ripe cheeses.
