Wining Liatiko Kentros is a dry rosé wine of unique origin and identity. It comes from pre-phylloxera vines of the Liatiko variety, cultivated for over a century in a cup shape, without irrigation, on the northern slopes of Mount Kedros in Rethymno. The special location at an altitude of 850m. offers ideal conditions for the expression of the variety, with sandy loam soils and protection from the strong winds of Psiloritis. The vinification is mild, with a short extraction of 2 hours and natural fermentation. Part of the wine matures in 600lt vats for 3 months, while the rest in old 225lt and 300lt barrels for 2 months. It goes well with seafood, shellfish and grilled fish. Served at 10-12°C. It has the potential to age for 3-6 years.
