Vinification and maturation: pre-fermentation extraction lasting 12 hours,

during alcoholic fermentation the extraction of the marcs takes 15

days and maturation is done by staying in French oak barrels for 12

months.

Tasting: Deep purple, almost violet, color and in fact very youthful and

alive. A feeling of "sweetness" in the aroma that combines dark fruits

(black cherry and prunes) with sweet spices and notes of nuts

(hazelnut, Brazil nuts, peeled almonds). The taste is rich, thick

and buttery, more well-groomed than usual soft, round and soft

Merlot, is harmonious, has peppers and excellent tannins. Very nice

aftertaste.

Accompaniment: Stuffed Christmas turkey, buffalo steak, breast

duck with small red fruits and their sauce, beef liver

cooked with caramelized onions and sauce, lamb and goat

children, not very old gruyeres. May accompany black

chocolate.
