The sorting begins with the vine and ends with the sorting film before the grapes are transported to the tanks. A pre-fermentation cold extraction period is followed and continues with fermentation temperatures of 18 - 22οC. The extraction and the alcoholic fermentation take about 20 days, followed by the malolactic fermentation. 12 months aging in French oak barrels 300lt. Reduced aging in a bottle for another 6 months. Delicate aromas of red fruits, tomatoes and olive paste that tie in perfectly with the wood of aging. Fine and light with soft but aggressive tannins and excellent balance. It has great aging potential.
