VARIETY: Assyrtiko
Origin of Grapes: From the selected "Aetos" vineyard, which is why it has the Eagle mark on the label, at the foot of Mount Telethrio, with a total area of 5 acres.
Vinification: Pre-fermentation cryoextraction for 12 hours at 5 o C, then slow fermentation of the must in stainless tanks in a controlled environment. The wine stays for 6 months on its fine lees, with periodic stirring (batonage). Typical aging method of Sur lies wine.
Aging Potential: Enjoy it within the first 3-4 years of its life. We suggest keeping a bottle in your cellar for the next 6-7 years.
Characteristics: Bright, white-yellow color with greenish highlights. Accentuated, lively aromas of exotic fruits such as those of pineapple, and lychee are spread over a background of mineral and metallicity composing an exuberant personality. In the mouth it unfolds elegantly with a sharp and refreshing acidity that gives life, richness of aromas and a prolonged aftertaste full of freshness.
It accompanies all seafood appetizers, fresh shellfish, grilled fish. Try it with lobster in butter sauce and natural goat cheeses.
