Variety: Malagouzia 60%, Assyrtiko 20%, Chardonnay 20%
Vineyard: Mountain vineyards in the area of Trebbia and Vrosthena, at an altitude of 800-900m. The harvest takes place in early September
Winemaking: Separate vinification of each variety. Fermentation in small tanks, at low temperatures for both Malagouzia and Assyrtiko. Remaining on the lees for approximately 3 months. The Chardonnay ferments in new 225 liter barrels and matures for 6 to 7 months. Final blending and remaining in a stainless steel tank for 3 weeks.
Tasting Characteristics: Straw yellow color with greenish highlights. Its nose is expressive with complex aromas such as notes of white flowers, fresh stone fruits, basil and thyme. In the mouth, the cool acidity is balanced by fruity flavors. The finish has a long "vanilla" aftertaste
Aging: It is pleasantly consumed in the current year but can also be aged for another three years
Harmony: Accompany seafood, fish, white meats with light sauces, pasta.
