Pre-fermentation crying, long fermentation at controlled temperature, maturation with fine mud for 12 months in oak barrels. It is not filtered and does not undergo any treatment before bottling. Purple color, discreet animation complex bouquet of ripe red and black fruits, prunes and figs, pine honey, cocoa coffee, and roasted almonds. Gentle tannins, balanced acidity, plenty of fruit, complex aftertaste. Accompanies poplar and red casserole with vegetables, BBQ, game, pies, cheeses and cold cuts. Enjoy it after a carafe transfer, today and for the next 8-10 years.
