Wining: Gentle pressing and collection of only the pre-ripe juice. De-mudging and fermentation with indigenous yeasts in stainless steel tanks at controlled temperatures. After fermentation, the wine is aged on the fine lees for 6 months.
Color: Light lemon with green highlights.
Taste characteristics: Medium+ intensity aromas of white and yellow fruits (pear-quince) accompanied by aromas of white flowers. Complex and elegant mouthfeel with crisp acidity and a fruity aftertaste.
Aging potential: 2-3 years.
Food pairing: Shellfish, salads and dishes with mild white sauces. Ideally served at 12-14°C.
